Broccoli Chicken Vegetable Sauté

*2 tbsp. Olive Oil
*4 chicken breast halves
*1 cup cut up broccoli
*½ cup thin sliced carrots
* 1 cup sliced mushrooms
* 1 cup cream of broccoli soup
*½ cup milk
*Salt and pepper to taste

1. Cook chicken in 1- tablespoon olive oil in skillet for 10 minutes or until browned on both sides.
2. Remove chicken; keep warm.
3. In same skillet cook broccoli, carrots and mushrooms for 5 minutes.
4. Stir often.
5. Add in the soup, milk, salt and pepper.
6. Heat to boiling.
7. Return chicken to skillet.
8. Reduce heat to low and simmer 5 minutes.
9. Serve over rice or pasta.
Yields: 4 servings
